Minsan naman nahihiya ako na si CJ palagi nagluluto. So, naisipan ko mag experiment.
I wanted to make something easy and relatively healthy, but still tasty. The answer – BAKED CHICKEN. The great thing about chicken is it’s like a blank canvass. Tipong kahit ano pwede mo gawin.
CJ likes it spicy, so gumawa ako ng spicy marinade with these ingredients:
1/4 cup EVOO
1 cup Brown Sugar
2 tsp Garlic Salt
2 tsp Black Pepper (ground)
3 tbsp Cayenne Pepper
1/4 cup Spanish Paprika (ground)
I mixed all these ingredients together to form the marinade/rub. Then I took 4 quarter chickens, all leg & thigh parts, and put the rub all over the chicken, even under the skin.
Remember to wash your chicken thoroughly before applying the rub.
Set the chicken aside in the fridge for about 20-30 minutes. Actually if you’re not in a hurry, leave it for as long as you can.
Pre-heat the oven. Set it on bake. We use an electric oven, and I set mine to high during pre-heat.
Get your baking pan and put foil on top. Then lay your chicken on top of the foil. I popped it in the oven, with the heat one notch lower than the highest setting. Leave it for 30 minutes.
Don’t freak out if it the skin of the chicken is looking kinda burnt in the oven. It’s just caramelizing. I only mention this because I was freaking out and CJ had to explain the whole concept of carameling sugar on meat to me. Now I know.
Tada! Brown Sugar Chicken!
Nasarapan naman si CJ. It was tender and moist. We ate it with little baby potatos and peppercinis. Nasarapan din ako. Haha!
